San Antonio's Gilbert's Mexican Food will stay open after community fundraising effort
After announcing that last weekend would be its last in operation, the West Side's Gilbert's Mexican Restaurant now has its loyal fans to thank for a reversal of fortune. In a Monday evening Facebook post, the Tex-Mex institution said it will be able to remain in operation after meeting a fundraising goal. In an online video message, second-generation owner Ashley Rodriguez Herrera said the community "showed up and showed out" to keep the more than 40-year-old business afloat.
